Ingredients:
Enough prepared steamed rice for your family
4 boneless chicken thighs or breasts
1/2 cup of mayo of choice
1/4 cup of grated Parmesan cheese
1/2 teaspoon of Italian seasonings or dried basil or oregano
4 teaspoons of fine breadcrumbs
Salt and pepper
Frozen vegetables (broccoli is recommended)
Instructions:
Start by steaming the rice according to package instructions, then set it aside.
Preheat your oven to 425 degrees Fahrenheit.
In a small bowl, mix the mayo, grated Parmesan cheese, and Italian seasonings.
Place the chicken thighs or breasts on a baking dish lined with parchment paper.
Spread the mayo and cheese mixture over each piece of chicken, making sure it's evenly coated.
Sprinkle 1 teaspoon of fine breadcrumbs over each piece of chicken, then add a light sprinkling of additional Parmesan.
Season with salt and pepper to taste.
Bake the chicken in the preheated oven for 20-25 minutes until it reaches an internal temperature of 165 degrees Fahrenheit.
During the last 10 minutes of baking, prepare the frozen vegetables according to package instructions.
