Chicken Parmesan, Rice, and Veggies

Ingredients:
- Enough prepared steamed rice for your family 
- 4 boneless chicken thighs or breasts 
- 1/2 cup of mayo of choice 
- 1/4 cup of grated Parmesan cheese 
- 1/2 teaspoon of Italian seasonings or dried basil or oregano 
- 4 teaspoons of fine breadcrumbs 
- Salt and pepper 
- Frozen vegetables (broccoli is recommended) 
Instructions:
- Start by steaming the rice according to package instructions, then set it aside. 
- Preheat your oven to 425 degrees Fahrenheit. 
- In a small bowl, mix the mayo, grated Parmesan cheese, and Italian seasonings. 
- Place the chicken thighs or breasts on a baking dish lined with parchment paper. 
- Spread the mayo and cheese mixture over each piece of chicken, making sure it's evenly coated. 
- Sprinkle 1 teaspoon of fine breadcrumbs over each piece of chicken, then add a light sprinkling of additional Parmesan. 
- Season with salt and pepper to taste. 
- Bake the chicken in the preheated oven for 20-25 minutes until it reaches an internal temperature of 165 degrees Fahrenheit. 
- During the last 10 minutes of baking, prepare the frozen vegetables according to package instructions.
