Chicken Parmesan, Rice, and Veggies

Ingredients:

  • Enough prepared steamed rice for your family

  • 4 boneless chicken thighs or breasts

  • 1/2 cup of mayo of choice

  • 1/4 cup of grated Parmesan cheese

  • 1/2 teaspoon of Italian seasonings or dried basil or oregano

  • 4 teaspoons of fine breadcrumbs

  • Salt and pepper

  • Frozen vegetables (broccoli is recommended)

Instructions:

  1. Start by steaming the rice according to package instructions, then set it aside.

  2. Preheat your oven to 425 degrees Fahrenheit.

  3. In a small bowl, mix the mayo, grated Parmesan cheese, and Italian seasonings.

  4. Place the chicken thighs or breasts on a baking dish lined with parchment paper.

  5. Spread the mayo and cheese mixture over each piece of chicken, making sure it's evenly coated.

  6. Sprinkle 1 teaspoon of fine breadcrumbs over each piece of chicken, then add a light sprinkling of additional Parmesan.

  7. Season with salt and pepper to taste.

  8. Bake the chicken in the preheated oven for 20-25 minutes until it reaches an internal temperature of 165 degrees Fahrenheit.

  9. During the last 10 minutes of baking, prepare the frozen vegetables according to package instructions.
